Have you looked at how nasty the edge of a plastic knife can be? At least metal knives leave a "clean" cut, instead of cheap and ragged one.

I have. I would argue that while a cut from a plastic knife would be worse than a clean one from a metal one (unless it's serrated?), it's considerably more difficult to get cut by a plastic knife. Not impossible, of course, but I'd not hold them as dangerous as metal knives.
